Chocolate Cake for Maryam

Told ya!  After a few weeks’ break, I got another order.. and this one was on the very same day Arfah called to order a birthday cake for her darling hubby..  And i’m quite certain, it’ll be some time when i’ll get my next order… hmm, i love doing part time biz like this.. hehehehe..

And thanks so much to Maryam for ‘believing’ in my cakes..  she ordered two at one go! hmmm, sedap tak?

Cupcakes for Danisya’s teachers

My daughter requested for cupcakes for her class party today (Teacher’s Day celebration).  So last nite, while she was enjoying her dreams, her mummy is still busy baking and decorating..  The first tray was baked only around 10pm and i finished everythng around 2pm.. and am having difficulty to open my eyes now.. and my head is aching…  and the list goes on….

Anyway, hope she’s having a good time and proud to ‘show off’ the not-so-pretty cuppies to her friends and teachers…

Peach Trifle

This is my third attempt.. and i think this is the best.  But perhaps it’ll be even better if i sprinkle some chocolate or add in the leftover chocolate fudge.. yup, should try that some other times.  This is pretty easy to make..  I learned about trifle from Mas (RN).  Thanks so much to her. 

You Need:

  • Chocolate roll cake – slice thinly (1 cm)
  • Non-dairy Whip Cream – beat until stiff peak forms (i used 1L of Rich Brand)
  • Instant Pudding Custard – prepare as per instruction + 2 tbs cocoa powder
  • 1 can peach (in syrup) – dice

To Assemble:-

  • Bottom layer is chocolate cake.  Sprinkle some peach syrup on to cake. Then put in diced peach.
  • Middle layer is custard.  Fold 1 1/2 cup of whipped cream into custard mixture. (should add in choc fudge here).
  • First layer is whipped cream.  Use diced peach as deco. (should also sprinkle choc fudge here).
  • Cover with “cling wrap” and refrigerate for 6 hours (overnight is better).

This is another cake for my bro’s wedding.. I’ve shared the recipe in my previous posting..  This is one of my favourites..  easy to make and the recipe is easy to remember.





Fruit Cake (Norazie’s)

Honestly, i don’t quite like fruit cake.. but who can resist this cake?

This cake is exceptionally marvellous.. the taste is just right, not too this and not too that (whatever that means!).. thanks soo much to Norazie for sharing this wonderful recipe. sorry the recipe is in Bahasa..  I only made half of this recipe..

KEK BUAH KUKUS – Norazie

Bahan:

2 tin butter cap golden churn

atau 680g butter packet

600g tepung gandum – ambil segenggam utk gaul dgn buah

600g gula – asing 300g utk gula hangus

2 sudu teh cream of tartar

2 sudu teh bikarbonat of soda

telur 5 bjii gred A atau 8 gred B

satu sudu serbuk buah pala

800g mix fruit – make sure beli yg fresh

Cara:

Mix butter & 300g gula hingga kembang, masukkan telur satu persatu.  Ayak tepung + cream of tartar & bikarbonat of soda & serbuk buah pala.  Masukkan dlm adunan butter tadi dan pukul perlahan hingga sebati.  Masak dlm bekas lain 300g gula tanpa air hingga menjadi gula hangus [kaler gelap & berbuih2].  Jalan mesin no. 1.5..slow… masukkan air gula hangus panas ke dalam adunan tepung perlahan2 hingga habis..[hati2 air gula panas].  Selesai, naikkan kelajuan mesin hingga air gula & tepung sebati.  tutup.  Gaulkan segenggam tepung yg dah diasingkan tadi dgn mix fruit.  Tabur buah dlm mangkuk adunan. Gaul sebentar – jgn lama sebab buah akan mendak.  Tips:  Gaul dgn mesin, satu dua round sahaja atau gaul dgn sudip kayu cukup
