A friend of my sis gave her lots of bananas last Sunday.. and her hubby immediately thot of Banana Cake.. Since i have a wonderful, moist & simple banana cake recipe, i immediately obliged.. I’m not sure if i’ve given the recipe, but to make your life easier in case you’d like to try, here it goes:-
- 1 cup sugar
- 1 cup oil (which i replace with melt butter)
- 6 – 7 bananas (i used ‘pisang berangan’ – sorry, not sure the name in English)
- 4 large eggs
- 1 1/2 cups all purpose flour
- 1 teaspoon soda bicarbonate
- 1/2 teaspoon baking powder
Mix flour, soda and baking powder in a bowl. Put it aside. Blend in sugar, oil, eggs and bananas in a food processor/blender. Then add the mixtures into the flour. Bake for about 50 minutes, 160C. That’s it! Oh i forgot, at the stage before baking, i also add in 2-3 bananas cut in chunk.. what can i say, i just love bananas.. you can skip this, your choice.. i doubled the recipe so that it’s enough to distribute to all my siblings houses..
And you know what.. today (tuesday), i made another batch (also double) and my siblings just can’t have enough of it.. especially when i sent it to their houses (all next to each other!) right after it was out of the oven.. who could resist a hot banana cake on a rainy afternoon.. heaven!!
